This beautiful cheese from Netherlands gets its deep orange color from the natural and flavorless Annatto seed.
A very firm paste with a complex, developing flavor that starts out sweet, hits a high sharp note, and then mellows into a smooth, nutty, bittersweet finish. Mimolette is wonderful to snack on with roasted or caramelized nuts, as well as fresh fruits. Pair with red wines or Belgian ales.
