Aged by the venerable affineur Rolf Beeler, Hoch Ybrig is as fine an example of Swiss cheese making as there ever was. A pungent, meaty aroma permeates the cheese, and the flavors are rich and warm... think of rich beef bouillon. Also hints of toasted nuts and a lingering sweetness on the finish.
This is up there as a staff favorite at Eat More Cheese... we just can't get enough of Hoch Ybrig!
Enjoy on its own to appreciate all the flavors, or try pairing with a nice white wine or Belgian ale.
