Harbison is a cheese that looks as good as it tastes. The beautiful, bloomy rind is encased in spruce bark from the woods of Vermont, which helps hold together the lusciously creamy interior.
Carefully slice the top off of this petit wheel to reveal the nearly liquid paste inside, with a very distinct woodsy, herbal and slightly sweet flavor. I liken the flavor to fresh onions, perfectly sauteed in butter.
Harbison makes a great centerpiece for any cheese plate. Spread the creamy paste on a crusty hunk of bread, and wash it down with a fizzy pale ale or sparkling white wine.
