This pretty cheese hails from the Loire Valley, as so many other great goat’s milk cheeses do. Formed in the shape of a small log, the pillowy white rind encases a thin creamline and delicate, chalky paste. Fresh, slightly honey-sweet flavors meld with the classic gamey notes of a good chevre. A great cheese to crumble over a salad or enjoy on its own.
Wine Pairing: A crisp white- try Sauvignon Blanc or unoaked Chardonnay, or a light rosé - those from Provence are a good match.
