Blue - Raw Cow's Milk - Piemonte, Italy
Not as widely known as the classic Italian blue, Gorgonzola, Blu del Moncenisio is fantastic in its own right. Beautiful blue-green veining lends the cheese a strong "kick", but not as biting as others such as Gorgonzola or Roquefort. The texture is semi-soft and creamy and melts on your tongue, developing sweeter milky flavors as it does so. A versatile blue that is as at home crumbled over salad as it is spread on a cracker or paired with fresh fruit.
Wine Pairing: Fruitier, bolder reds like California Cabernet Sauvignon or Negroamaro from Southern Italy. Could also work with thicker white dessert wines, like a nice Sauternes.
