Semi-Aged Firm - Raw Sheep's Milk - La Mancha, Spain

This Manchego is aged between 5 and 8 months, which develops a full flavor while still retaining a smooth, easy to cut texture.  Slightly zesty and citrusy, with a full buttery mouthfeel.  

A perfect table cheese, versatile and flavorful.  Enjoy with grapes and other fruits, fig spread, or lightly drizzled with extra virgin olive oil.

     Wine Pairing: A medium bodied Spanish Garnatxa or lighter, young Rioja are good options to pair with such a robust cheese.  If you'd like to try a white, go for something full bodied and rich - Spanish Garnatxa Blanca is a good choice.
