Fresh Aged - Pasteurized Goat's Milk - Loire Valley, France - Traditional Rennet
This pretty cheese hails from the Loire Valley, as so many other great goat’s milk cheeses do.  Formed in the shape of a small log, the pillowy white rind encases a thin creamline and delicate, chalky paste.  Fresh, slightly honey-sweet flavors meld with the classic gamey notes of a good chevre.  A great cheese to crumble over a salad or enjoy on its own.
Wine Pairing: A crisp white- try Sauvignon Blanc or unoaked Chardonnay, or a light rosé - those from Provence are a good match.

The classic Italian blue.  Firm, crumbly texture and a strong, up front blue bite.  Slightly salty, and pleasantly creamy as it melts on your tongue, revealing a lingering sweetness.  Gorgonzola is a versatile blue and is as at home on cheese plate as it is on a fresh salad or baked into a savory pastry. 
Try pairing with caramelized walnuts, fresh fruit and sweet dessert wines.
